Mutton Kalia (Mutton Curry) Recipes by Chef Sara Riaz



A traditional Pakistani recipe that can be served at either lunch or dinner. Prepared with wheat, yogurt and tomatoes.

Ingredients

  • Mutton ½ kg
  • Onion 1 (chopped)
  • Wheat grains 2 tbsp (soaked)
  • Fennel seeds 1 tsp
  • All spices 1 tbsp (whole)
  • Ginger garlic paste 1 tbsp
  • Red chili powder 1 tsp
  • Coriander powder ½ tsp
  • Cumin seeds 1 tsp
  • Turmeric powder ¼ tsp
  • Salt to taste
  • Yogurt ½ cup
  • Tomato 2
  • Green chili 4 (sliced)
  • Fresh coriander (chopped) 2 tbsp
  • Water as required

Cooking Directions

  1. Put fennel seeds and all spices in a muslin cloth and tie it in a bundle.
  2. Heat oil and fry onion in oil.
  3. Then add ginger garlic, salt, red chili, turmeric powder, coriander powder, cumin and the spice bundle in onion.
  4. Now cut tomatoes and add in spices mixture.
  5. The add meat and cook well.
  6. Add soaked wheat grains and a little water.
  7. When wheat grains and meat is tender then take out the spices bundle.
  8. Add yogurt and then add a little water, cover and simmer for 10 minutes.
  9. Finally add coriander leaves and green chilies.
  10. Serve hot with naan.
